Millet Patties


  • 1 cup of millet
  • 2 cups of water
  • Pinch of sea salt
  • 2 tablespoons of fresh parsley
  • 1-2 tablespoons of fresh chives
  • 1 small onion (finely grated)
  • 1 small carrot (finely grated)
  • 2 tablespoons mustard (good quality- Dijon or whole grain)
  • 2 tablespoons shoyu (soy sauce) or tamari
  • Good quality sunflower oil or extra virgin olive oil for frying

For the sauce

  • 2 tablespoons tahini
  • 2 tablespoons of shoyu
  • 1 tablespoons of balsamic vinegar
  • 1 tablespoons of apple juice


Wash and cook the millet (in 2 cups of water with a pinch of salt, bring to a boil and simmer gently for 20 minutes).

Add the millet to a bowl and mix in all the other ingredients. Use your hands to mix and mash it all together.

Form into patties and fry for 3-4 minutes on each side.

To make the sauce mix together all the ingredients to form a sauce. Add in more apple juice if you would like the sauce to be runnier.
