Millet Patties Recipe

Ingredients
For the Patties
- 1 cup of millet
- 2 cups of water
- Pinch of sea salt
- 2 tablespoons of fresh parsley
- 1-2 tablespoons of fresh chives
- 1 small onion (finely grated)
- 1 small carrot (finely grated)
- 2 tablespoons mustard (good quality- Dijon or whole grain)
- 2 tablespoons shoyu (soy sauce) or tamari
- Good quality sunflower oil or extra virgin olive oil for frying
For the sauce
- 2 tablespoons tahini
- 2 tablespoons of shoyu
- 1 tablespoons of balsamic vinegar
- 1 tablespoons of apple juice
Method
Step 1
Wash and cook the millet (in 2 cups of water with a pinch of salt, bring to a boil and simmer gently for 20 minutes).
Step 2
Add the millet to a bowl and mix in all the other ingredients. Use your hands to mix and mash it all together.
Step 3
Form into patties and fry for 3-4 minutes on each side.
Step 4
To make the sauce mix together all the ingredients to form a sauce. Add in more apple juice if you would like the sauce to be runnier.
