Macrobiotic Cooking & Macrobiotic Recipes - Millet Patties

RECIPE

1 cup of millet
2 cups of water
Pinch of sea salt
2 tablespoons of fresh parsley
1-2 tablespoons of fresh chives
1 small onion (finely grated)
1 small carrot (finely grated)
2 tablespoons mustard (good quality- Dijon or whole grain)
2 tablespoons shoyu (soy sauce) or tamari
Good quality sunflower oil or extra virgin olive oil for frying

For the sauce
2 tablespoons tahini
2 tablespoons of shoyu
1 tablespoons of balsamic vinegar
1 tablespoons of apple juice

METHOD 

Wash and cook the millet (in 2 cups of water with a pinch of salt, bring to a boil and simmer gently for 20 minutes). 

Add the millet to a bowl and mix in all the other ingredients. Use your hands to mix and mash it all together. 

Form into patties and fry for 3-4 minutes on each side. 

To make the sauce mix together all the ingredients to form a sauce. Add in more apple juice if you would like the sauce to be runnier.
