Falafel

Ingredients

  • Chickpeas (1 cup) – soaked for 24 hours 1/2 cup of spelt or other flour
  • Onion (1) – diced
  • Garlic (1 clove) – minced
  • Paprika (1/2 tsp)
  • Coriander (1 tsp)
  • Cumin (1/2 tsp)
  • Turmeric (1 tsp)
  • Parsley (handful) – finely chopped
  • Sea salt (1 tbsp)
  • Sunflower oil for deep frying

Method

Soak the chickpeas for 24 hours. Discard water. Do not cook them. Add them straight into a food processor. Add in the other ingredients and blend all the ingredients together.
Form into balls and deep fry.
