Tofu Skewers & Satay Sauce
Get ready to tantalize your taste buds with these deliciously grilled tofu skewers, packed with flavorful veggies and served with a creamy, homemade satay sauce.

Tofu Skewers Ingredients
- Fennel bulb (1) – cut into large chunks
- Squash (1 cup) – cut into large chunks
- Red onions (2) – cut into large chunks
- Red pepper (1) – cut into large chunks
- Tofu (1 block) – cut into large chunks
- Garlic powder (1 tsp)
- Herb salt (1/2 tsp)
- Olive oil (1 & 1/2 tbsp)
- Skewer sticks
For the Marinade
- 1/4 cup of shoyu
- 1/4 cup of water
Method
Turn the oven on at 180. Place all the ingredients into a baking dish and mix well. Bake for 30 minutes. Remove from the oven and allow to cool before assembling the tofu and vegetables onto the skewers.
Serve with satay sauce (see recipe).

Satay Sauce Ingredients
- Sugar free peanut butter (4 tbsp)
- Shoyu (1 tbsp)
- Garlic (1/2 clove or 1 tsp powder) – finely minced
- Warm/hot water (4-7 tbsp)
Method
To make the satay sauce, combine all the ingredients in a bowl and mix well. Keep stirring until the liquid and peanut butter combine to form a creamy sauce consistency. Add more water if you would like a runnier sauce.
